Recipe: Corny Chicken Wraps

First new recipe of 2009! It comes from a new cookbook my mom got me for the bridal shower - Taste of Home Busy Family Cookbook.

Corny Chicken Wraps (love the name!)

2 cups cubed cooked chicken breast
1 can (11 ounces) whole kernel corn, drained
1 cup salsa
1 cup shredded cheddar cheese
8 flour tortillas (the 6 inch kind), warmed

(I used three chicken breasts that I had thawed, and just chopped them up into pieces, and cooked them in a skillet on the stove with some Pam, before adding the other ingredients.) Combine the cooked chicken, corn, and salsa. Cook over medium heat until heated through.

Sprinkle cheese over tortillas (I warmed them in the oven first by just pre-heating the oven to a random temperature and wrapping them up in some aluminum foil). Add the chicken mixture on top of the cheese, roll, and chow down! NavyGuy was suspicious at first, but a few bites won him over. I like that it's a little different than just a regular taco, yet still has a good taste, and is probably healthier. The corn gives it a nice crunch. We had a basic bag salad on the side.
